To
make natural casings more pliable and easier to stuff, put
sodium phosphate in water you soak your casings in. Use
same type of phosphate you use in ham cure. It makes a big
difference, Use approximately 3oz. per gallon of water.
For smoked sausages, add 1/2oz. of sodium erythbate to the
casing watter for better smoke color.

Striped
casings provide a simple solution for : Distinguishing between products
at the factory or market, avoiding non peeled casings. Colored casings
are available in transferable and non transferable colors. Transferable
colors use water soluble, FDA approved orange and red food dyes
to enhance the color of the surface, Transferable casings improve
shelf appeal, while differentiating your brand in the market place.
Non transferable colored casings are ideal for preventing non peeled
casings from being packaged, Printed casings are available in one
color by special order only.
The casings
are delivered in shirred sticks that do not require soaking. In
order to ensure the best possible stuffing performance, the casings
are packaged in caddies that seal in the moisture and preserve the
product for storage. |
