Casing Guide
Venison summer sausage, snack sticks, and links each work best in a different casing. This guide shows which casing to use for your venison, and where to find custom printing and packaging for your harvest.
For venison summer sausage, use a fibrous casing. It is the standard for summer sausage in every size, and it comes in clear, mahogany, and red. For venison snack sticks and venison sausage links, use a small caliber collagen casing, which is ready to stuff straight from the box with no soaking. Venison sausage and venison summer sausage are often the same product, so the guidance below covers both.
If you want a small diameter venison sausage, natural hog casings are also an option.
| Product | Best casing | Why |
|---|---|---|
| Venison summer sausage, all sizes | Fibrous | Strong, holds its shape through a long smoke, and gives deep, even color |
| Venison snack sticks | Small caliber edible collagen | Ready to stuff, no soaking, consistent caliber, sized for jerky style sticks |
| Venison sausage links | Edible collagen | Consistent sizing batch after batch, ready to stuff from the box |
| Small diameter venison sausage | Natural hog casings | A natural option for small diameter links; rinse and soak before stuffing |
| Venison bologna | Fibrous | Used for venison bologna in all sizes |
Fibrous casings are made for the long smoke that summer sausage needs. Clear fibrous allows full smoke penetration, pre colored mahogany gives consistent exterior color, and red is available for a distinctive finish. Choose a grade for how firmly the casing should grip the meat: protein coated for strong adhesion, regular for light adhesion, or peelable for easy removal.

We print casings for hunters, such as "Venison Sausage" and "Not For Sale", and custom camo patterns in the color and style you want. Custom printed casings have minimum quantities that depend on the print, so call us to talk through your project. Standard casings have no minimum order, whether you are processing one buck or a freezer full of venison.
Keep your batch fresh with vacuum pouches or shrink bags, and use resealable doypack pouches for snack sticks and jerky. See everything for hunters on our hunter and venison casings page, or request a free quote or call 201-939-3335.
