Fibrous casings are one of the most versatile and widely used casing types in commercial meat processing. Made from a cellulose fiber matrix, they provide excellent dimensional stability, good smoke permeability, and consistent performance during stuffing, cooking, smoking, and other processing steps.
We stock fibrous casings in clear, mahogany, and red, with a broad range of sizes from small salami diameters up to large bologna and deli loaf formats. Other colors are available on request and may involve larger minimum quantities and longer lead times.
We can also help source custom sizes, colors, printing, and other specifications based on your production requirements.
A shirred stick is a pre shirred length of casing compressed into a compact stick, allowing the casing to feed continuously onto the stuffing horn during production.
Fibrous casings are available in three grades, offering different levels of adhesion to the finished product. Choose the grade based on how firmly you want the casing to adhere and how easily it needs to be removed after processing.
| Grade | Description |
|---|---|
| Fibrous Protein Coated | Designed for strong meat adhesion. The protein coating helps the casing grip tightly to the surface of the finished product. |
| Fibrous Regular | Light adhesion with no protein or peelable coating. Provides some meat cling while allowing the casing to be removed more easily. |
| Fibrous Peelable | Designed for easy casing removal. The peelable coating allows the casing to release cleanly and easily from the finished product. |

Consistent casing dimensions help provide predictable stuffing and finished product appearance.
Allows smoke to penetrate the casing during applicable smoking processes.
Suitable for a wide range of manual and automated stuffing applications.
In house printing, up to 4 colors, for branded, market ready packaging.
Fibrous casings are the standard choice for summer sausage, salami, and bologna. Choose Fibrous Protein Coated when you want the casing to grip the meat firmly, Fibrous Regular for light adhesion, and Fibrous Peelable when the casing needs to come off cleanly after processing. Then match the size to your finished diameter and the format to your equipment. When selecting a fibrous casing, consider the following:
If you are unsure which casing is right for your product, call 201-939-3335 and we will be glad to help.
Casing release and adhesion can be affected by soaking, humidity, casing grade, casing fit, stuffing pressure, product formulation, and processing conditions. See our casing troubleshooting guide for common causes and solutions.
Fibrous casing size codes do not always correspond directly to the final stuffed diameter. Use the stuffing diameter as the primary reference when selecting casing for your product. Actual stuffed diameter can vary depending on product formulation, stuffing pressure, processing conditions, and casing specification.

Fibrous casing is obtained from regenerated cellulose and includes an abaca paper sheet for additional strength. Basic chemical composition: cellulose 52 to 72 percent, glycerin 20 to 24 percent, moisture 4 to 22 percent, oil 0 to 2 percent.
The following are general guidelines. Soaking requirements can vary by casing manufacturer, grade, size, and format, so always follow the preparation instructions supplied with the specific casing you purchase.
Proper soaking makes the casing pliable and reduces the risk of splitting or bursting during stuffing. Store the casing in its original packaging until you are ready to soak, and use only fresh drinking water. Always observe the recommended stuffing diameter for your material, since this can vary slightly with soaking. Soak time depends on the format:
⚠️ Water that is too hot, too cold, or applied for too long or too short a time can change the characteristics of the casing. Do not soak longer than necessary.
